Can I change my employer after receiving Green Card EAD?

I picked up from H1B this year but USCIS denied my H1B on Jan 4th, 2018. However, I already had ongoing EB3 green card application. From the H1B denial date to EAD receiving date I didn't work(less than 2 months) and a month ago USCIS sent me the GC EAD, also on March 7 USCIS mailed me an RFE saying that they want me to file my birth certificate again. Before I did submit the birth certificate given by my embassy. This time I got the birth certificate from my countries local authorities, which I am going to mail once it arrives.  After filing the RFE I am hoping to receive the interview date for the green card. I am wondering how to get ready for the interview.  My timelines: I-485 received by USCIS on November 1st, 2017. I-485 is transferred to local office on Jan 30th, 2018.

1- May H1B denial bring an issue to receive the green card? How to approach this during the interview?

2- What sort of documents that I need to take with me? Like Copy of my I-20s, pay stubs, W2s, birth certificate, driver's licence, tax returns and etc..Are they asking any traffic violations, like speeding tickets, parking tickets and etc? Does it matter if I have a court case for unpaid bills for the hospital and does this sort of things affect the GC process on interviewer's eyes?

3-  My employer is an Indian consulting company, however, I do work for a client company. Should I ask from client company the client letter which proves that I'm working there? Or taking the employment letter from my employer is enough?

4- What is the suggested time to leave the employer and find another related job after receiving EAD? Should I wait to switch the employer till I actually have the actual green card?

5- What are the long terms affects to switch the employer right after receiving the green card or while the green card is under pending status? May the citizenship process affects if the immediate change happens? How USCIS is approaching switching jobs right after getting EAD, and/or after getting the green card?
